Ingredients:

- 1 cup frozen kale or spinach

- 1 cup frozen mixed vegetables (peas, corn, green beans)

Instructions:
1. Sauté Vegetables:
- In a large pot, heat vegetable oil over medium heat. Add chopped onion, diced carrots, and chopped celery. Sauté until the vegetables are softened, about 5 minutes.
2. Add Aromatics:
